This may seem an unlikely combination, but trust me, for those moments when you're not sure if it's dinner or breakfast that you want, this satisfies completely. This recipe is based on a killer version of chicken and waffles that is served at Emeril's Restaurant in New Orleans.

Total Time: 1 1/2 hours plus 4 hours to overnight for marinating the chicken
Easy to over salt this one since the pancetta will simmer throughout. Salt lightly and use Essence judiciously along the way, then enjoy. This would be great as a brunch side dish, just cook a few eggs right before serving.
These are flavored with cheddar, garlic, and green onion and make for a very special treat. They would be delicious base for fried eggs and sauteed leafy greens or mushrooms, in beef stew, or on their own. This is also a great way to use leftover grits.
