This dish originally made a splash in my cookbook Potluck and let me tell you, it's a dish worth making the next time you need a hearty breakfast casserole that feeds a crowd. If you cannot find linguica sausage, simply substitute any smoked pork sausage that you like.
These are flavored with cheddar, garlic, and green onion and make for a very special treat. They would be delicious base for fried eggs and sauteed leafy greens or mushrooms, in beef stew, or on their own. This is also a great way to use leftover grits. Pour them in a pan as directed below and proceed.
