These are flavored with cheddar, garlic, and green onion and make for a very special treat. They would be delicious base for fried eggs and sauteed leafy greens or mushrooms, in beef stew, or on their own. This is also a great way to use leftover grits. Pour them in a pan as directed below and proceed.
If you have a variety of beets at your local farmer's market feel free to use as many varieties as you like. The same is true of mache. If it is not available, use any type of soft green such as bibb lettuce, sunflower sprouts, or an herb mix.
