A no-sodium sesoning that can enhance many Italian-style dishes. Simmer it in any homemade or jarred sauce. Whisk it with a little oil and vinegar for a marinade. Rub it inside a whole chicken. Or rub it on steak, lamb, or pork before cooking. You can even sprinkle it over left over pizza before you re-heat it in the oven!
Mussels, shrimp and crabmeat simmered with tomatoes, garlic and white wine are served over pasta but could easily be served with a hearty loaf of peasant bread for sopping up the sauce. This dish is quick and easy to get on the table for a mid-week dinner.
The great thing about this dish is that the polenta can be prepared up to two days ahead of time, set to cool in the fridge, and then brought out just before you’re ready to grill for a quick and easy side. Serve with drizzled olive oil and Parmesan cheese. Spectacular!
