Turkey Gumbo is usually made from the broth you make from the leftover turkey after carving it up on a holiday. Never throw it away! If you don't make gumbo the next day, you can always save it in your freezer.

You gotta love chili! This is a lighter and leaner version, using ground turkey rather than beef or pork. The recipe calls for lean ground turkey and I recommend using a mixture of both white and dark meat to add more depth of flavor to the dish.
