Casey's Panini

This simple sandwich is best when prepared with the freshest and highest quality ingredients. Use tomatoes and basil from your garden. Seek out fresh mozzarella from an Italian grocer and buy bread from a local baker.

  • Yield: 4 servings


  • 4 slices dense white bread
  • 1 tomato, sliced
  • 1/4 pound mozzarella cheese
  • Salt
  • Freshly ground black pepper
  • 1/4 cup torn basil leaves
  • Extra-virgin olive oil


  • On each slice of bread, place 1 slice of mozzarella and 1 slice of tomato. Season with salt and pepper. Place in a toaster oven and toast for 3 minutes, or until the cheese begins to melt. Remove from the toaster oven and top with torn basil and a drizzle of olive oil.
