Roasted Red Pepper Rouille

  • Total Time: 10 minutes
  • Yield: 1 1/2 cups


  • 1 red bell pepper, roasted, peeled, and diced
  • 1 tablespoon minced garlic
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon freshly ground black pepper
  • 1 cup olive oil


  • Combine the roasted pepper, garlic, egg, salt, crushed red pepper, cayenne, and black pepper in a food processor or blender and purée. Slowly stream in the oil and continue to process until the mixture forms a thick emulsion.
