Pear And Goat Cheese Salad

  • Yield: 4 to 6 servings


  • 8 ounces goat cheese
  • 6 cups assorted, mixed lettuce
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • 4 ripe pears, peeled, cored, and cut into chunks
  • 1/2 cup walnuts, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper


  • Divide the goat cheese into 4 equal portions. Arrange the assorted lettuce on 4 individual plates. In a medium-size mixing bowl, blend together the lemon juice and olive oil. Toss in the pears and walnuts. Season with salt and pepper. Arrange on plates of lettuce and top with portions of goat cheese.
