Country Ham and Apple Slaw Sandwich with Baby Swiss and Bourbon Mustard

Country Ham and Apple Slaw Sandwich with Baby Swiss and Bourbon Mustard

  • 16 slices pumpernickel bread
  • Bourbon Mustard, recipe follows
  • 8 slices baby swiss cheese
  • 1 pound thinly sliced Smithfield or Black Forest ham
  • Apple Slaw, recipe follows

  • 2 cups thinly sliced cabbage
  • 1/2 thinly sliced red onion
  • 1 juliened apple, core and seeds removed
  • 1 tablespoon chopped pickled jalapeno
  • 1/4 cup golden raisins
  • 1/4 cup toasted slivered or sliced almonds
  • 1 tablespoon chopped mint
  • 1 tablespoon honey
  • 1/2 cup mayonnaise
  • Salt and white pepper

  • 3/4 cup Creole mustard
  • 2 tablespoons Steen's 100% Cane Syrup
  • 1 tablespoon honey
  • 2 tablespoons bourbon


  • Spread 8 slices of the bread with the Bourbon Mustard. Next place a slice of cheese followed by 2 ounces of the sliced ham onto each of these slices. Finish the sandwich with 1/4 cup of the slaw and another slice of the bread.

  • APPLE SLAW: In a medium mixing bowl, combine all of the ingredients except the salt and white pepper.

  • Mix thoroughly and season with salt and white pepper.

  • BOURBON MUSTARD: Combine all ingredients in a small mixing bowl and mix well.
