Emeril's Fried Rice

Emeril's Fried Rice

Fried rice is so simple to make at home and you can play with the ingredients. If you can't find Chinese sausage buy a sweet dry sausage. Use your favorite vegetables and really mix it up.

  • Yield: 4 servings


  • 1/4 cup peanut oil
  • 1/2 cup oyster mushrooms, thinly sliced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup snow peas, thinly sliced on a bias
  • 3 cups cooked white rice
  • 1/2 cup chopped green onions
  • 1/2 cup shredded roasted pork
  • 1/2 cup diced shrimp
  • 1/2 cup diced Chinese sausage
  • 2 teaspoons minced garlic
  • 3 eggs
  • 1 1/2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1/2 cup salted and roasted peanuts, chopped for garnish


  • Over medium high heat, heat the oil in the wok. Cook the mushrooms in batches until golden brown, about 2 minutes. Add the bell peppers and snow peas and cook for 2 minutes or until just wilted. Add the rice and cook until golden brown and cooked through. Add the green onions, pork, shrimp, and sausage. Stir in the garlic, eggs, soy sauce, and sesame oil. Stir-fry for 2 minutes. Season with salt and pepper. Garnish with chopped peanuts.
