Emeril's Pineapple Batida: Batida De Abacaxi

  • Yield: 6 servings


  • 1 1/2 cups CachaÁa (Brazilian rum), or white rum
  • 3/4 cup pineapple juice
  • 2 tablespoons lemon juice
  • 2 tablespoons simple syrup, (equal amounts sugar and water heated until sugar dissolves), cool
  • 3 cups crushed ice
  • 6 pineapple wedges, garnish


  • Combine rum, pineapple juice, lemon juice and simple syrup in a cocktail shaker and shake vigorously. Strain into a cocktail glass over crushed ice. Garnish with pineapple wedge.
