Soy Mayo

You’ll have a hard time keeping your fingers out of the soy glaze that’s the basis of this flavored mayo.

  • Yield: About 3/4 cup



  • Combine the sugar and soy sauce in a very small saucepan and cook over medium-low heat until reduced to a syrup, about 5 minutes. The soy-sugar mixture should coat the back of a spoon. Set it aside to cool completely.
  • Stir 2 tablespoons of the soy glaze into the mayonnaise. Use immediately or refrigerate for up to 3 days until ready to use.
