Vidalia Onion And Pear Salsa

  • Yield: 3 cups


  • 2 cups chopped Vidalia onions
  • 1 cup diced pears (unpeeled)
  • 1/2 cup chopped pimentos
  • 1 tablespoon chopped jalapeno peppers
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon salt


  • In a medium bowl, combine the onions, pears, pimentos, jalapeno peppers, cilantro, lime juice and salt. Serve immediately, or cover and refrigerate for up to 2 days. Serve with seafood, chicken or hamburgers.
