Creamy Pimento Cheese

  • Yield: About 4 cups


  • 8 ounces sharp cheddar cheese
  • 8 ounces cream cheese, softened
  • One-third cup mayonnaise
  • 1 garlic clove, minced
  • 1 (8-ounce) jar pimentos, diced
  • One-half teaspoon black pepper
  • One-half teaspoon hot sauce (optional)


  • Combine the cheddar and the cream cheese in mixing bowl, and cream with an electric mixer until light and fluffy. Add the remaining ingredients. Mix well. Cover and chill overnight. Best served at room temperature. Use as sandwich spread or serve with crackers.
