Hot Swiss Canapes

  • Yield: 24 canapés


  • 3 egg whites
  • 3 slices uncooked bacon, chopped
  • 1 1/2 cups (about 6 ounces) shredded Swiss cheese
  • 3/4 cup chopped green bell peppers
  • 1/4 cup chopped green onions (green part only)
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly grated black pepper
  • 24 slices rye party bread


  • Beat the egg whites until stiff peaks form. Fold in the bacon, cheese, bell peppers, onions, salt and pepper. Spread about one tablespoon on each bread slice. Place on baking sheets and broil about four inches from the heat for about five minutes. Serve hot.
