Pesto Plenty


  • 2 cups fresh basil leaves
  • One-fourth cup pine nuts
  • One-fourth cup peeled garlic cloves
  • 2 tablespoons fresh parsley
  • One-fourth cup grated Parmesan cheese
  • One-third cup grated Pecorino Romano cheese
  • 2 tablespoons (or more) olive oil
  • Salt


  • Place all ingredients in a food processor and process to a smooth paste. Adjust seasoning with salt. Toss with warm pasta and serve as a side dish to fish or poultry.
