Ruston Peach Salsa


  • 2 pounds Ruston peaches, peeled, seeded, and diced
  • 1 small can pineapple chunks, drained
  • 3 green onions, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons cider vinegar
  • Salt and freshly ground black pepper


  • Mix together in a bowl the peaches, pineapple, green onions, garlic, and vinegar. Season to taste with salt and pepper. Serve with grilled pork, chicken, or sausage. It's best to make the salsa a day ahead and chilled overnight.
