Sesame Cucumber Salad

  • Yield: About 1 cup


  • 2 tablespoons rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon sesame oil
  • 1 cucumbers, peeled, seeded, sliced into slivers
  • Salt and freshly ground black pepper


  • Combine rice wine vinegar, soy sauce, sugar, sesame seeds and sesame oil. Toss cucumbers in this sesame mixture. Season with salt and pepper. Reserve for plating of spring roll.
