Simple Spring Rhubarb Sauce

  • Yield: One and one-half cups


  • 2 pounds rhubarb, diced
  • One-fourth cup water
  • 3 to 4 tablespoons honey, or to taste
  • Three-fourths teaspoon ground cinnamon
  • One-half teaspoon freshly grated ginger


  • Simmer the rhubarb and water over medium heat until the rhubarb becomes soft, about 2 minutes. Add the remaining ingredients and simmer, stirring, an additional 3 minutes, or until the sauce reaches the desired consistency. Adjust sweetener to taste.
  • Serve warm over puff pastry, pancakes, or vanilla ice cream.
