- 2 pounds rhubarb, diced
- One-fourth cup water
- 3 to 4 tablespoons honey, or to taste
- Three-fourths teaspoon ground cinnamon
- One-half teaspoon freshly grated ginger
- Simmer the rhubarb and water over medium heat until the rhubarb becomes soft, about 2 minutes. Add the remaining ingredients and simmer, stirring, an additional 3 minutes, or until the sauce reaches the desired consistency. Adjust sweetener to taste.
- Serve warm over puff pastry, pancakes, or vanilla ice cream.
