Aunt Marsha's Potato Latkes

  • Yield: 4 to 6


  • 2 medium russet potatoes
  • 1 medium onion
  • 1 egg
  • 3 tablespoons flour
  • One-half teaspoon baking powder
  • Salt and pepper to taste


  • Grate the potato and onion together. Add the egg and other ingredients, mixing well. Fry heaping tablespoons of the mixture in a blend of schmaltz and Crisco. Serve with sour cream and/or applesauce.
