Fava Bean Relish

  • Yield: About 1 2/3 cups


  • 1 tablespoon olive oil
  • 8 ounces (1 cup) chopped Andouille sausage
  • 1/2 cup fresh or frozen (and thawed) fava beans, blanched in salted water for 1 minutes, and peeled
  • 1/4 cup chopped onions
  • 1/4 cup peeled, seeded, and chopped Italian plum tomatoes
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 2 turns freshly ground black pepper


  • Heat the oil in a large nonreactive skillet over high heat. Add the andouille and sauté, stirring occasionally, for 2 minutes. Add the beans, onions, tomatoes, garlic, and cilantro, and sauté, stirring and shaking the skillet occasionally, for 2 minutes. Remove from the heat. Season with salt and pepper.
