Grown Up Tartar Sauce

  • Yield: About 1 1/4 cups


  • 1 1/2 teaspoons unsalted butter
  • 1/2 cup fresh or thawed frozen corn kernels
  • Pinch of salt
  • Pinch of cayenne
  • 1 cup Mayonnaise or
  • store-bought mayonnaise
  • 1/4 cup seeded and chopped tomatoes
  • 2 tablespoons chopped green onions (green parts)
  • 1 tablespoon minced jalapeÒo
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 teaspoon minced garlic
  • 1/2 teaspoon Creole Seasoning


  • Melt the butter in a small skillet over medium-high heat. Add the corn, salt, and cayenne and cook, stirring occasionally, until the corn is a deep golden brown, 5 minutes. (The corn will make popping sounds as it cooks.) Transfer to a large mixing bowl and let cool completely.
  • Add the remaining ingredients to the corn and mix well. (The sauce can be covered and refrigerated for up to five days.)
