Port Wine Reduction

  • Yield: 1/2 cup


  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 2 bay leaves
  • 3 cups port wine


  • Combine all of the ingredients in a medium-size saucepan over medium heat and bring to a boil. Continue to boil the mixture until it thickens and reduces to about 1/2 cup, about 30 minutes. Strain through a fine-mesh strainer and let cool. Use at room temperature.
