Chili Sauce

  • Yield: 2/3 cup


  • 10 dried chiles, halved, and soaked in warm water, so they are pliable
  • 1 1/2 tablespoons peanut oil
  • 3 tablespoons finely sliced garlic
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 2/3 cup water
  • 2 teaspoons cornstarch dissolved in 2 teaspoons water


  • Drain chiles. Heat a small saucepan and when smoking hot, add the 1 1/2 tablespoons oil, garlic, and chilies and stir-fry for 20 seconds. Then add the rest of the sauce ingredients and simmer for 2 minutes.
