Creative Salsa

  • Yield: About 4 cups


  • 1/2 pound black beans, cooked until tender, cooled (2 to 2 1/2 cups)
  • 1 cup roasted corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 2 tablespoons chopped cilantro
  • Juice of 1 lemon
  • Juice of 1 lime
  • Salt and white pepper


  • Drain beans. In a bowl combine beans with remaining ingredients; season to taste with salt and pepper.
