Spicy Slaw

  • Yield: 4 servings.


  • 2 cups water
  • One-fourth cup distilled white vinegar
  • 1 teaspoon sugar
  • 1 and one-half teaspoons salt
  • 1 tablespoon chopped garlic
  • 3 jalapeno peppers, chopped with seeds
  • 1 celery heart, chopped
  • 3 cups thinly sliced white cabbage
  • 3 cups thinly sliced red cabbage


  • Combine the water, vinegar, sugar and salt in a non-reactive saucepan over medium heat and bring to a boil. Combine the garlic, peppers, and celery heart in a food processor and puree for about 45 seconds. Add the hot liquid and puree again. Strain the mixture through a fine sieve and allow to cool to room temperature. Combine the cabbages and toss with the dressing.
