Dashi Broth

  • Yield: 4 cups


  • 1 quart water
  • 3 pieces 3-inch square dried kombu (kelp)
  • 1/2 cup dried bonito flakes


  • Bring water and kombu just to a boil over medium heat. Immediately remove kombu, then add bonito flakes and bring to a boil. Remove from heat and allow to steep 2 minutes. Strain into a clean container and use as desired.
