Basic Tomato Sauce

  • Yield: About 3 cups


  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced small
  • 2 tablespoons minced garlic
  • Salt and freshly ground black pepper
  • 3 tablespoons red wine (optional)
  • 1 (28-ounce) can whole plum tomatoes
  • 3 to 4 fresh basil leaves (optional)


  • Heat oil in a pot over medium heat. Add onion and garlic and cook for about 5 to 7 minutes, until onions are soft and translucent. Season with salt and pepper to taste and add red wine, tomatoes, and basil leaves, if desired. Bring to a boil, then reduce heat to a simmer and cook, stirring occasionally, until thickened, 20 to 25 minutes.
