Spinach, Raspberry, And Walnut Salad

  • Yield: 6 servings


  • 1-1/2 pounds fresh spinach, washed and dried
  • 1 cup fresh raspberries
  • 1/4 cup chopped walnuts
  • 1 tablespoon chopped fresh tarragon (1 teaspoon dried)
  • 1/4 cup raspberry vinegar
  • 1/2 cup raspberry juice


  • Tear the spinach into small pieces. In a salad bowl, place spinach, raspberries, tarragon, and walnuts. Mix together the vinegar and raspberry juice. Pour over the salad and toss to coat.
