Cucumber Sandwiches

  • Yield: 8 sandwiches


  • 1 large English cucumber, thinly sliced
  • 16 teaspoons mayonnaise
  • 16 slices extra-thin wheat bread
  • Salt and freshly ground black pepper to taste


  • Spread 1 teaspoon of mayonnaise on each slice of bread. Place sliced cucumbers on one slice, sprinkle with salt and pepper, and top with another slice of bread. Trim off the crusts and cut sandwiches in triangles or three strips, and cover with plastic wrap or a clean cloth while you work.
