- 8 ounces skinless chicken breast, sliced and cooked
- 16 teaspoons mayonnaise
- Salt and freshly ground black pepper to taste
- 16 slices extra-thin wheat bread
- Spread 1 teaspoon of mayonnaise on each slice of bread. Place 1 ounce of chicken in each sandwich. Season with salt and pepper. Trim off the crusts and cut the sandwiches into triangles or three strips, and cover with plastic wrap or a clean cloth as you work.
