Mushroom Dressing


  • 3/4 cup olive oil
  • 1 cup sliced assorted fresh wild mushrooms (Chanterelles, Shiitake, Oyster, Black Trumpets)
  • 1 egg (optional)
  • 4 tablespoons dry sherry
  • 2 tablespoons finely-chopped shallots
  • 2 tablespoons finely-chopped garlic
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • Black pepper


  • Heat 1/4 cup oil in a medium skillet and saute mushrooms 3 minutes. Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns
  • pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
