Marcelle's Cornbread

  • Yield: 6 to 8 servings


  • 2 to 3 tablespoons bacon grease or shortening
  • 2 cups yellow cornmeal
  • 1 cup all-purpose flour
  • 4 teaspoons baking powder
  • Three-fourths teaspoons salt
  • 1 teaspoon sugar
  • 1 beaten egg
  • One and one-half cups milk


  • Preheat oven to 425 degrees. Sift the dry ingredients together in a large bowl. Add the egg and milk and mix well. Melt the bacon grease or shortening in a 9-inch skillet, preferably iron, and pour in the batter. Bake until golden brown, about 25 to 30 minutes.
