Fresh Mint Vinaigrette
Ingredients
- ½ cup extra-virgin olive oil
- ¼ cup fresh lemon juice
- ¼ cup champagne vinegar
- ¼ cup packed fresh mint leaves
- 1 tablespoon raw honey
- 1 tablespoon Dijon mustard
- 1 clove garlic, roughly chopped
- ¼ teaspoon sea salt
- ¼ teaspoon cayenne pepper
Directions
In a food processor, combine all of the ingredients and blend until smooth. Store in the refrigerator for up to a week in a resealable container.
