Recipe
Green Onion Coulis
This is an incredibly easy sauce to make and can be used on any number of dishes. It is paired with a Crab and Corn Cheesecake but would also go well with crab cakes or corn fritters.
Ingredients
- 3/4 cup chopped green onions
- 1/2 cup fresh parsley sprigs
- 1 tablespoon chopped shallots
- 1 tablespoon chopped garlic
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 1 1/2 cups olive oil
Directions
Place the green onions, parsley, shallots, and garlic in a food processor or a blender and puree.
Add the eggs, salt and pepper and continue to puree until a smooth paste has formed. With the machine running, slowly pour the olive oil in until it's thoroughly incorporated. If it begins to get too thick add a few drops of warm water.
Serve immediately or store in a resealable container in the fridge for up to 3 days.
