Grilled Almond-Butter Sandwiches with Bananas and Semisweet Chocolate
Move over, peanut butter and jelly. These grilled almond butter sandwiches make lunch time into a real treat!
Ingredients
- 8 slices white country bread
- 2 tablespoons butter
- 1/2 cup Homemade Almond Butter
- 4 ounces semisweet chocolate, coarsely chopped or broken into pieces
- 4 small bananas cut into 1/4-inch rounds
Directions
Preheat a grill or a grill pan to medium heat.
On a clean work surface, lay out 4 bread slices. Spread butter on the outside of each piece; set aside. Spread 2 tablespoons almond butter each on remaining 4 pieces of bread; place 2 ounces chocolate on top, then arrange banana slices on top of chocolate. Top with buttered bread slices, buttered sides facing out. Place 2 sandwiches at a time onto the grill or grill pan (if using a grill, top with a sandwich press or heavy plate) and cook for 3 minutes or until crisp and just until chocolate has melted. Repeat with 2 remaining sandwiches. Slice sandwiches in half or in quarters and serve immediately.
Cook's Note: As an alternate cooking method, heat 1 tablespoon butter in a saute pan. When hot and bubbly, add 2 sandwiches to pan. Cook for 2 minutes per side or until bread is golden brown and chocolate has melted. Repeat with remaining sandwiches. These sandwiches can be made with a variety of ingredients. The chocolate can be replaced with 1 tablespoon of honey, or cherry or plum jam can be added instead of the bananas and chocolate.
