Pear And Goat Cheese Salad
Ingredients
- 8 ounces goat cheese
- 6 cups assorted, mixed lettuce
- 1/4 cup fresh lemon juice
- 1/2 cup olive oil
- 2 ripe pears, peeled, cored, and cut into chunks
- 1/2 cup pistachios, toasted
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions
Divide the goat cheese into 4 equal portions. Arrange the assorted lettuce on 4 individual plates. In a medium-size mixing bowl, blend together the lemon juice and olive oil. Toss in the pears and pistachios. Season with salt and pepper. Arrange on plates of lettuce and top with portions of goat cheese.
