Country Ham and Apple Slaw Sandwich with Baby Swiss and Bourbon Mustard
Ingredients
- 16 slices pumpernickel bread
- Bourbon Mustard, recipe follows
- 8 slices baby swiss cheese
- 1 pound thinly sliced Smithfield or Black Forest ham
- Apple Slaw, recipe follows
APPLE SLAW
- 2 cups thinly sliced cabbage
- 1/2 thinly sliced red onion
- 1 juliened apple, core and seeds removed
- 1 tablespoon chopped pickled jalapeno
- 1/4 cup golden raisins
- 1/4 cup toasted slivered or sliced almonds
- 1 tablespoon chopped mint
- 1 tablespoon honey
- 1/2 cup mayonnaise
- Salt and white pepper
BOURBON MUSTARD
- 3/4 cup Creole mustard
- 2 tablespoons Steen's 100% Cane Syrup
- 1 tablespoon honey
- 2 tablespoons bourbon
Directions
Spread 8 slices of the bread with the Bourbon Mustard. Next place a slice of cheese followed by 2 ounces of the sliced ham onto each of these slices. Finish the sandwich with 1/4 cup of the slaw and another slice of the bread.
APPLE SLAW: In a medium mixing bowl, combine all of the ingredients except the salt and white pepper.
Mix thoroughly and season with salt and white pepper.
BOURBON MUSTARD: Combine all ingredients in a small mixing bowl and mix well.
