Asian Pear, Celery and Fennel Salad with a Pear Vinaigrette
Ingredients
Pear Vinaigrette
- 1/2 Asian pear, cored
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup grapeseed oil
Asian Pear Salad
- 1/2 large Asian pear, cored, thinly shaved on a mandolin
- 4 ribs celery, thinly shaved on a mandolin
- 1 small fennel bulb, thinly shaved on a mandolin
- 1/2 cup Candied Walnuts, chopped
- 1/3 cup pomegranate seeds, for garnish
- fennel fronds for garnsih
Directions
In the bowl of a blender, combine all of the ingredients for the vinaigrette and blend until well homogenized. Set aside until ready to use. Yield: about 1 cup.
In a large mixing bowl, combine the pear, celery, fennel and toss well. Drizzle with the vinaigrette and toss again. Garnish with the Candied Walnuts, pomegranate seeds and fennel fronds. Drizzle with more dressing and serve immediately.
