Arugula Pesto
Ingredients
- 2 cups baby arugula
- 1/2 cup grated parmesan cheese
- 1/2 cup toasted walnuts, roughly chopped
- 1 tablespoon minced garlic
- 1 cup olive oil
- salt and pepper to taste
Directions
In a food processor, combine the arugula, parmesan, walnuts, and garlic and pulse to blend. With the machine running, pour the olive oil through the food tube in a slow, steady stream and process until smooth, stopping to scrape down the sides of the bowl as needed. Taste and adjust the seasonings.
