Ham and Gruyere Waffles
Ingredients
- 1 3/4 cup all- purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 large eggs, separated
- 8 tablespoons unsalted butter, melted
- 1 cup buttermilk
- 3/4 cup club soda
- 1 teaspoon minced fresh thyme leaves
- 2 ounces finely minced Black Forest Ham (3/8 cup)
- 3 ounces grated Gruyere cheese, (about 1/2 cup)
Directions
Whisk flour, sugar, baking powder, baking soda, salt, and black pepper together in a medium mixing bowl.
In a separate bowl, whisk together the egg yolks, melted butter, buttermilk, club soda, and thyme.
Gradually whisk wet ingredients into dry ingredients.
Beat egg whites with an electric mixer to soft peaks. Using a large whisk, gently fold whites into the batter.
Preheat your waffle maker.
When the indicator light comes on, pour 3/4 to 1 cup of the batter onto each grid of the waffle maker. Close and flip the waffle maker, then cook until waffles are golden and crisp, 6 to 7 minutes. Repeat cooking with remaining batter. Keep waffles warm in a preheated oven until ready to serve.
Waffles are delicious on their own, or spread with softened butter and serve with maple syrup.
