Garlicky Chinese Green Beans for the Pressure Cooker
Ingredients
- 1 ¼ pounds green beans
- ½ cup water
- 1 tablespoon peanut oil or olive oil
- 4 garlic cloves, minced
- 2 teaspoons fish sauce
- Salt, to taste
Directions
Press pressure function, select custom setting. Set to short cook time, set time to 1 minute. Pour in the water. Place steamer rack in the inner pot. Place green beans on steamer rack. Lock the pressure lid. Start. Then, Quick Release.
Drain water and set aside green beans to air dry. Towel dry the inner pot. Press sauté function; select the beef setting. Press timer; set to 5 minutes. Start. Ensure your pot is as hot as it can be when you add in garlic. Add the peanut oil and the minced garlic, sauté for roughly 30 seconds. Do not let the garlic burn. Pour in air-dried green beans and sauté for 30 seconds. Season with fish sauce and fine sea salt to taste. Sauté for another 30 seconds. The garlic should be golden brown at this point and super flavorful.
Serve immediately
