Ahi Tuna Tartare

Ingredients
- 1 pound ahi tuna, diced
- 1/4 cup minced fresh chives
- 1/4 cup black sesame seeds
- Sweet Soy Dressing, as needed [5]
- Salt and freshly ground black pepper
- Black Sesame Seed Tuiles, for serving [6]
- Sliced avocados, for serving
- Sriracha sauce, for serving
- Micro greens, for serving
Directions
Mix the tuna together with the chives, sesame seeds, and enough of the Sweet Soy Dressing to coat. The mixture should be bright red and glossy. Season to taste with salt and pepper.
Place one of the sesame tuile rings on each plate and fill it with the tuna tartar. Top with the sliced avocados and drizzle with more of the Sweet Soy Dressing. Decorate the plate with dots of Sriracha and garnish the tartare with micro greens.
