Fresh Mint Tea
This recipe is adapted from the traditional Moroccan mint tea, where green tea is used instead of black, but still with an abundance of fresh spearmint. It is delicious served over ice, but you can also enjoy it warm too at other times of the year.
Ingredients
- 8 cups water
- 3 cups loosely packed fresh spearmint leaves, plus more for garnish
- 2/3 cup sugar
- Four 1/4 inch-thick-orange slices, plus more for garnish
- 12 whole cloves
- 4 orange pekoe tea bags
Directions
Bring the water to a boil in a sauce pan.
In another saucepan or large bowl, add the 3 cups spearmint leaves, sugar, orange slices, cloves, and tea bags. Carefully pour the boiling water over the tea mixture, and let it steep for 3 minutes. Stir to dissolve the sugar. Strain the tea into a serving vessel, discarding the tea bags, mint leaves and cloves. Add the orange slices to the serving vessel. Allow the tea to cool completely, then add additional mint. Serve over ice with additional orange slices if desired.
