Roasted Shallot Sauce
Ingredients
- 16 roasted shallots
- 8 roasted garlic cloves
- 1/2 teaspoon salt
- 4 turns freshly ground black pepper
- 1/2 cup port or dry red wine mixed with 1 tablespoon sugar
- 2 cups Veal or Beef Stock or [2]
- Brown Chicken Stock [3]
Directions
- Combine the shallots, garlic, salt, pepper, and port in a small nonreactive saucepan over high heat. Bring to a boil and cook for 5 minutes.
- Stir in the stock and cook over high heat for 10 minutes. Reduce the heat to medium and cook for 20 to 25 minutes.
