Garlic Wine Sauce
Ingredients
- 3 cups Veal Stock, [2]
- Brown Chicken Stock, or [3]
- canned low-sodium beef broth
- 1 cup dry red wine
- 1/4 cup plus 2 tablespoons minced shallots
- 1/4 cup plus 2 tablespoons minced garlic
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 4 tablespoons (1/2 stick) unsalted butter, cut into 4 pieces
Directions
- Bring the stock, wine, shallots, garlic, salt, and pepper to a boil in a medium heavy nonreactive saucepan, over medium-high heat. Boil until the liquid is reduced by half, about 15 minutes. Remove from the heat. Whisk in the butter, one piece at a time, until the sauce is smooth. Serve immediately.
