Smoked Turkey And Blueberry Salad
Ingredients
- One-half cup light mayonnaise
- One-half cup plain low-fat yogurt
- One-fourth cup orange marmalade
- 2 teaspoons fresh lemon juice
- One-half teaspoon ground black pepper
- 3 medium peaches, cut in wedges (about 3 cups)
- 1 pint blueberries
- 2 cups cubed smoked deli turkey (about 8 ounces)
- 4 cups lettuce leaves
Directions
- In a medium bowl, combine the mayonnaise, yogurt, marmalade, lemon juice, and pepper in a bowl. Add the peaches, blueberries and turkey. Toss until well coated. Serve over lettuce leaves.
