Mushroom Dressing
Ingredients
- 3/4 cup olive oil
- 1 cup sliced assorted fresh wild mushrooms (Chanterelles, Shiitake, Oyster, Black Trumpets)
- 1 egg (optional)
- 4 tablespoons dry sherry
- 2 tablespoons finely-chopped shallots
- 2 tablespoons finely-chopped garlic
- 2 tablespoons fresh lemon juice
- 1 teaspoon salt
- Black pepper
Directions
- Heat 1/4 cup oil in a medium skillet and saute mushrooms 3 minutes. Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns
- pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
