Grown Up Tartar Sauce
Ingredients
- 1 1/2 teaspoons unsalted butter
- 1/2 cup fresh or thawed frozen corn kernels
- Pinch of salt
- Pinch of cayenne
- 1 cup Mayonnaise or
- store-bought mayonnaise
- 1/4 cup seeded and chopped tomatoes
- 2 tablespoons chopped green onions (green parts)
- 1 tablespoon minced jalapeÒo
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 teaspoon minced garlic
- 1/2 teaspoon Creole Seasoning
Directions
- Melt the butter in a small skillet over medium-high heat. Add the corn, salt, and cayenne and cook, stirring occasionally, until the corn is a deep golden brown, 5 minutes. (The corn will make popping sounds as it cooks.) Transfer to a large mixing bowl and let cool completely.
- Add the remaining ingredients to the corn and mix well. (The sauce can be covered and refrigerated for up to five days.)
