Burnt Honey Spiced Syrup
Ingredients
- 1/2 cup honey
- 1/3 cup water
- 1-inch knob of fresh ginger, sliced
- Peel of 1 medium orange
- 1 tablespoon crushed cardamom pods
- 1 star anise pod
- 1 tablespoon whole allspice berries
- 1 teaspoon ground cinnamon
- 1 tablespoon whole pink peppercorns
- 1/2 teaspoon ground nutmeg
- 1 teaspoon sea salt
Directions
Heat the honey in a small saucepan over medium heat. Once the honey starts to simmer and foam, reduce the heat to low. Let the honey cook over low heat, stirring constantly for another 2-3 minutes, or until the honey reaches 300 degrees F or deep golden brown. Remove from heat and add the water and stir to combine. Add the ginger, the orange peel, crushed cardamom, star anise, allspice, ground cinnamon, pink peppercorns, ground nutmeg, & sea salt. Stir ingredients and then cook over low heat until flavors are incorporated, 5-10 minutes. Let cool completely and then fine strain into a jar or a dispenser of choice. This should keep for up to a month refrigerated.
